" All the Sparnaciens know the shape of the de Castellane tower located at the end and a little off the Avenue de Champagne. Established in 1895 by the Viscount Florens de Castellane, the house now belongs to the Laurent-Perrier group. On the labels of its cuvées the Saint-Andrews red cross is represented, the brand emblem. Made from the three grape varieties, this pale gold brut mainly made from black grapes (60%, both pinot parity), chardonnay in addition. Its intense aromas of roasting (grilled coffea) extend in a round palate, beaming and harmonious. A champagne for meal which should be accomodated with a white fish in sauce, solerolls with crayfish for instance. "
